BBQ - Barbeque - Barbecue Sauce
Target Barbecue Sauce
This is a deliciously sweet, hickory smoke-flavored barbecue sauce which is excellent for baby back ribs or any other cut of beef. It is also good for barbecuing chicken. This is a tomato-based sauce.
1/4 C. Molasses
1 C. Catsup
1/2 to 3/4 C. Brown Sugar
4 tsp. Hickory liquid smoke
1/2 tsp. Onion salt
1/2 C. + 2 Tbsp. vinegar
1/2 tsp. Dry mustard
1/2 tsp. Garlic powder, not garlic salt
1 1/2 tsp. Corn Starch
Mix molasses, catsup, 1/2 cup brown sugar, liquid smoke, onion salt, vinegar, mustard and garlic powder. Simmer for 20 minutes. Taste, add additional 1/4 brown sugar, if desired, and cook another 5 minutes. Mix 1-1/2 teaspoons corn starch with 1 tablespoon water. Stir to mix well. Pour into hot mixture and cook until slightly thickened, about 5 minutes. Cool.
K.C. Master BBQ Sauce
2 cups water
3/4 cup light corn syrup
1/2 cup tomato paste
1/2 cup white vinegar
3 Tbls. molasses
3 Tbls. brown sugar
1 teas. liquid smoke
1/2 teas. salt
1/4 teas. onion powder
1/4 teas. black pepper
1/8 teas. garlic powder
Combine all ingredients in a sauce pan and mix well.
Over medium-high heat, bring just to a boil; lower heat and simmer for 1 hour, stirring occasionally.

Thick & Spicy BBQ Sauce
1 cup apple cider vinegar
1 six ounce can of tomato paste
3 tbsp margarine
1 tbsp black pepper
1 tbsp cayenne pepper
1 tbsp kosher salt
Combine all ingredients in a sauce pan and bring to s slow boil. reduce heat and simmer for 15-20 minutes, stirring often, Good on all meats. Best on Brisket or Ribs.
Vinegar Based BBQ Sauce
1 cup apple cider vinegar
1 cup red wine vinegar
1 tbsp hot pepper sauce
2 tbsp brown sugar
1 tsp cayenne pepper
1 tsp salt
1 tsp black pepper
Mix all ingredients in a blender. Makes a great marinade and basting sauce. Great on chicken.
Sweet & Sassy BBQ Sauce
1 cup ketchup
1/2 cup red wine vinegar
1 cup light brown sugar
1 tbsp worcestershire sauce
1-1/2 tbsp dry mustard
Mix all ingredients in a blender until smooth. Good on all meats. Best on chicken or as a dipping sauce.

Riverside Barbeque Sauce
2 C vinegar
1/2 clove garlic, mashed
1 Tbsp Worcestershire sauce
2 tsp dry Mustard
1/4 tsp Tabasco
1 C sugar
2 C Ketchup
1 1/2 Tbsp salt
Combine ingredients and simmer for 10 minutes.
2 tbs kosher salt
2 tbs white sugar
2 tbs brown sugar
1 tbs course ground black pepper
2 tsp paprika
2 tsp chili powder
1 tsp cumin
1 tsp garlic powder
1 tsp onion powder
1/2 tsp ground basil
1/2 tsp dry mustard
1/2 tsp cayenne pepper

Proven Easy RECIPES
MOgridder's Spice Rub
Makes about 1 cup of rub
2-1/2 tablespoon paprika
2 tablespoons kosher salt
2 tablespoons granulated garlic
2 teaspoons granulated sugar
1 teaspoon raw or granulated brown sugar
1 tablespoon chili powder
1 tablespoon black pepper
1 tablespoon onion powder
1 teaspoon cayenne pepper
1 teaspoon dried oregano
1 teaspoon dried thyme
Mix everything together in a small bowl.
Store in an air tight glass jar.
MOgridder's BBQ Sauce
Makes about 3-1/2 cups of sauce
1/2 cup sugar
1 teaspoon oregano
1/2 teaspoon dried thyme
1 teaspoon garlic
2 teaspoons of kosher salt
2 to 3 teaspoons of pepper
1/2 cup white vinegar
1 cup molasses
1 cup ketchup
3/4 cup prepared mustard
1/2 teaspoon cayenne pepper
Combine the first six ingredients in a medium sauce pan, then stir in enough vinegar to make a loose paste. Combine the remaining ingredients, mix well, and bring to a boil (stirring constantly). Reduce heat and simmer until thick (about 20 minutes).
MOgridder's BBQ is truly a unique experience. It's actually a trailer in the Hunts Point section of the Bronx (NYC Area). The trailer does double duty: it has a smoker attached to the back for cooking barbecue, but it's also the office for Fred Donnelly's auto repair shop. You can get an oil change and a large rack of ribs in the same place.
